1 Large NY steak strip for two
4 Cloves of Garlic
1 bunch of basil
1 Tablespoon of butter
1 Tablespoon of vegetable oil
1 Cup of Cherry Tomatoes
Fresh Ground Pepper
Coarse Sea Salt
Tenderize your steak, this can be done by giving it a good pounding with a mallet.
Salt your steak both sides with coarse sea salt.
Add and coat both sides of the steak with vegetable oil.
Thinly slice garlic.
Remove leaves of basil.
Add 1 Tablespoon of butter to large skillet, on high heat.
Add 1 Tablespoon of vegetable oil.
Melt and swirl.
(Pan is ready when you can only hold your hand over for 3 seconds).
Place Steak in pan and baste constantly with hot oil/butter, (2-3 minutes med-rare).
Flip steak and repeat process.
Remove steak form pan.
Add 1 cup of cherry tomatoes to pan on high heat.
Saute for 1 minute stirring occassionally.
Add garlic, saute 1 minute.
Add basil fo r30 seconds, should slightly crisp.
Pour sizzling tomatoe mixture over steak.
Add fresh ground pepper and large pinch of coarse sea salt.
Drizzle with reduces balsamic vinegar.
